Zucchini Casserole

Got too much zucchini and need a delicious dish to use it in? This zucchini casserole is simple to make and will be a family favorite.

Ingredients
- 4 medium zucchini
- 2¼ cups chicken flavored stuffing mix
- 1 cup condensed cream of chicken soup
- ½ cup sour cream
- 2 medium carrots
- 1 medium onion
- ¼ tsp. salt
Instructions
- Shred zucchini and carrots. Dice onion.
- Place in large bowl.
- Add stuffing mix, condensed soup, sour cream, salt to bowl.
- Using a large spoon thoroughly mix ingredients until blended evenly.
- Transfer to large casserole dish or oven safe pan.
- Bake at 350 degs for 35-40 minutes or until vegetables are tender.
Notes
Don't be afraid to change things up a bit. You can add shredded potatoes, corn, peas, and other vegetables to make your own unique casserole.
