Potatoes and lamb make this traditional Irish stew a delicious meal for the entire family. Perfect for St. Paddy's Day!

Ingredients
  • 4 potatoes, thinly sliced
  • 4 medium onions, thinly sliced
  • 6 carrots, sliced
  • 1 pound bacon, chopped
  • 3 pounds lean lamb chops, 1-inch thick, trimmed, and cut into small pieces
  • 2½ cups water
  • 4 potatoes, halved
  • Salt and pepper to taste
  • Fresh parsley, finely chopped
Instructions
  1. Begin with layers of sliced potatoes, onions, and carrots. Top with a layer of bacon and lamb.Sprinkle liberally with salt and pepper, to taste.
  2. Repeat these steps until all the ingredients are used. Add enough water to just cover the ingredients.
  3. Arrange the halved potatoes on top of the stew, but not in contact with the water, so they can steam as the rest is cooking. Simmer over a very low heat for about 2 hours.
  4. Sprinkle liberally with the chopped parsley and serve in soup bowls.
Notes
To make Irish stew, all the ingredients are assembled in layers in a large stew pot.
You can serve the stew straight away or leave it covered overnight in the fridge for the flavors to develop. Serve in deep bowls with slices of fresh bread to soak up the liquid.
